Wine juice is made from the pulp of the grape but the skin which contains "anthocyane" which brings out balanced flavours, tannins and colour.


The question is to find the right balance to extract the best possible flavour and character from the grapes. In order to avoid using herbicides, we plough the earth between the vines with a very special device composed of 2 sharp blades leaving the rows covered with herbage.

Chemicals have been replaced by a very special compost we make with marc , hay and horse manure . Keeping the right management of the canopy is an important task. Work is done manually focusing on quality : trellising, crop-thinning, hand picking, cutting, grafting so each piece of soil brings out its own character and its force to the wine.
