Chemicals have been replaced by a very special compost we make with marc , hay and horse manure . Keeping the right management of the canopy is an important task. Work is done manually focusing on quality : trellising, crop-thinning, hand picking, cutting, grafting so each piece of soil brings out its own character and its force to the wine.
