Soil

Blend of grapes from two neighbouring, but quite distinct, regions. The first region is the north of Saint André de Sangonis, which is composed of cryoclastic limestone gravel in a sandy clay soil. The other region is south of Saint André de Sangonis, which is composed of a mixture of sand and pebbles established by Herault's river. Both qualitative soils are poor with good drainage.

Methods of culture

We use sustainable winegrowing practices with the help of technical advisers. We do not use any fertilizers or herbicides. We produce compost that we spread in winter and we plough the soil between the vines using a mechanical device. One out of every two rows in the vineyard is grassed over. More information here.

Harvesting

picked by hand and sorted vine by vine. Grapes are picked at optimum ripeness after tasting the berries.

Winemaking

"Vinification intégrale" 100% barrique-fermented, de-stemmed and crushed, the barriques are rolled over four times a day. Micro-oxygénation 2 to 5 times throughout the maceration stage depending on each barrel (oyygen), long maceration (5 weeks) and draining then the press wine is added back after settling.

Barrel ageing

On the fine lees in the same barrels for 12 months. We only use new and second-fill barriques (made entirely from European oak) for this cuvee. We carry out judicious micro-oxygenation while ageing according to taste-profile. We stir up the lees once a week in winter and once a fortnight in spring.

Date of bottling

May 2005 . Natural corks are used and bottles are lied down 48 hours to enable the cork to expand.

Tasting

this wine's personality comes from being vinified totally in barriques, from very ripe-picked grapes. This winemaking technique helps the wine fully integrate with the wood. Over the years, this wine will develop even more complex and intricate aromas.

2006

-  Appearance : very rich colour with crimson tones, clings nicely on the glass.
-  Nose : elegant lively nose showing black and red fruits blended with olive and lightly toasted liquorice, which will get more complex with ageing. -Taste : full-bodied, dense, fleshy and structured mouth-feel ; nice balance and velvety finish.

2005

-  Appearance : deep colour, bright and clear, hints of mature roses with lovely thick texture.
-  Aroma : intense wild herbs on the nose, thyme and bay leaf with eucalyptus even developing into slightly smoky notes peppered with sweet red and black fruits.
-  Taste : up-front, rounded mouth-feel carried by nice tannins with a touch of underlining freshness and good length. The finish is lightly chocolatey yet minty too.

We suggest you serve this wine between 16 and 17 degrees Celsius.

The best food to go with this wine : subtly spicy red meat dishes.
